Caldo de Pollo is a hearty Mexican chicken soup that showcases the rich flavors of a homemade broth, complemented by tender chicken pieces and a vibrant medley of vegetables. 

Traditionally, it is prepared using whole chicken parts, such as leg quarters or thighs, simmered in water alongside seasonings like garlic and salt to extract a deep, savory taste. This dish exemplifies comfort food, often prepared to nourish both body and soul.

This caldo de pollo came out absolutely delicious on my first try! I love serving this chicken and vegetable soup with warm corn tortillas, along with a side of Spanish rice and refried beans.

Ingredients Used in Caldo de Pollo


Make caldo de pollo at home with these simple ingredients:

  • 5 pounds chicken leg quarters
  • 2 tablespoons minced garlic and 2 tablespoons salt
  • 2 gallons water
  • 1 tablespoon garlic powder

  • 1 cube chicken bouillon
  • 4 large potatoes, peeled and cut into large chunks
  • 4 large carrots, peeled and cut into large chunks
  • 4 zucchini, cut into large chunks

  • 1 chayote, cut into large chunks
  • 1 large white onion, cut into large chunks
  • ½ bunch fresh cilantro, chopped

These ingredients combine to create the distinctive, comforting flavor of caldo de pollo that many can remember from family gatherings or cozy meals at home.

Making of Caldo de Pollo


Place the chicken legs in a large pot and cover them with water. Add the minced garlic, salt, and garlic powder. Cover the pot and bring the contents to a boil over high heat. Once boiling, reduce the heat to a simmer and cook for 1 to 2 hours, or until the chicken easily separates from the bones.

Add the chicken bouillon cube and stir until it dissolves. Then, incorporate the carrots, potatoes, zucchini, chayote, and white onion.

What is caldo de pollo made of?

Lower the heat to medium-low and cook until the carrots and potatoes become tender, which should take 45 minutes to 1 hour.

Add the chopped cilantro to the soup and let it simmer for another 5 minutes.Serve the soup hot and enjoy your meal!
