For this recipe, I opted for dark red kidney beans, as they were the only canned variety I could find during my shopping trip. When preparing red beans from dried beans, I typically choose smaller red beans, as they create a smoother, creamier texture.

 Since canned small red beans are usually hard to find, kidney beans are a suitable substitute. You can choose either light or dark kidney beans for this dish.

When you don't have time to soak and boil dry beans, these homemade Red Beans and Rice get you all the flavor in a fraction of the time. Creating the perfect red beans and rice recipe is all about selecting the right ingredients and mastering the preparation techniques.

  • 14 oz. Andouille sausage
  • 1 Tbsp cooking oil 
  • 4 cloves garlic 
  • 1 bell pepper 
  • 1 tsp dried oregano
 
  • 1 yellow onion 
  • 3 ribs celery 
  • 1/4 tsp cayenne pepper 
  • 1/4 tsp freshly cracked black pepper 
  • 2 tsp smoked paprika 
  • 1 tsp dried thyme 

  • 1/2 tsp garlic powder 
  • 1/2 tsp onion powder 
  • 3 15oz. cans kidney beans 
  • 1 cup chicken broth 
  • 3 green onions, sliced 
  • 1.5 cups long grain white rice

How to Make easy Red Beans and Rice recipe– Step by Step?


Cut the sausage into slices or half slices. Heat a large pot over medium heat and add the sausage along with a bit of cooking oil. Cook, stirring occasionally, until the sausage is brown .

While the sausage cooks, chop the onion, bell pepper, and celery, and mince the garlic. Add the diced vegetables and garlic to the pot with the sausage and cook until the onions are soft and translucent. Stir in the smoked paprika, oregano, thyme, garlic powder, onion powder, cayenne, and black pepper. 

Continue to cook for another minute, stirring occasionally. Drain two cans of beans, and place the third can, with its liquid, in a blender. Blend until smooth. The pureed beans will help thicken the mixture and create a creamier texture. Add the drained beans, pureed beans, and chicken broth to the pot, stirring well.

Cover the pot and bring the mixture to a boil. Once boiling, reduce the heat to medium-low and let it simmer for about 30 minutes, stirring occasionally. While the beans are simmering, cook your rice. Add the uncooked rice and 3 cups of water to a pot. Cover the pot and bring it to a boil over high heat. 

Once boiling, reduce the heat to low and let it simmer for 15 minutes. After 15 minutes, turn off the heat and let the rice sit, covered, for an additional 5 minutes. Fluff the rice with a fork before serving.

After the beans have simmered for 30 minutes, taste and add salt if necessary (I didn’t find it needed any, but salt levels can vary). Serve the beans in bowls with a scoop of rice and a sprinkle of sliced green onions on top.
