Crustless Quiche (Easy and Healthy)
Quiches are savory, often enjoyed as a versatile meal option.This simple quiche recipe uses a premade pie crust—no one will guess! It's packed with ham, cheese, and green onions, making it the perfect quick breakfast or dinner option!
You can really add anything you want to this easy quiche recipe — other vegetables, different cheeses or seasonings — but ham and cheese is our favorite way to do it up. I don’t know about you, but we love eggs for any meal of the day here .
I realized that with the right balance, I could make my crustless quiche without heavy cream, simply swapping in a bit of half-and-half. The result was still rich and indulgent, just like a true quiche, whether it’s crustless or not.
Plus, by omitting the crust, you save both time and calories, making this dish an excellent option for a healthy lunch or light dinner. Without the crust, the flavor of the filling takes center stage .
Ingredients for Crustless Quiche :
This crustless quiche is ready for all kinds of ingredients you make have in your fridge. It’s a perfect dish to use up what you have on hand.
- 5 large eggs
- ⅔ cup whole milk
- 1/4 tsp salt
- 1/2 tsp black pepper
- 100g/ 3.5 oz ham , diced
- 1 cup shredded cheese (anything that melts except mozzarella)

How to Make crustless Quiche?
Start with a premade pie crust.Take the mixture of grated cheeses, the ham and, if desired, the chives. Stir. Serve a spoonful of the stuffing inside the molds. In a bowl, whisk the eggs with milk. Add salt and pepper.
Then add a large spoonful of the egg mixture. Bake at 350 degrees F for 35 minutes . Don’t forget to keep an eye on the quiche as it bakes. You don’t want the crust getting too brown on top as the eggs cook! If necessary, cover the outside ring of the crust with a bit of foil to prevent it from browning further.
Frittata vs Quiche: What’s the Difference
Origin: Frittata is a traditional Italian dish, whereas quiche originates from France. Crust: Quiche typically has a crust, while frittata does not. However, some quiches are made without a crust.
Base Ingredients: Both dishes are made with eggs, but quiche uses an egg custard that includes cream or milk. Frittatas, on the other hand, are sometimes made using only egg whites.

Pan: Quiches are baked in a pie dish or tart pan, while frittatas are cooked in a skillet. Texture: Frittatas have a firm outer layer and a tender, fluffy interior, while quiches feature a creamy, custard-like center and a buttery, flaky crust.
Timing: Quiche tends to be more labor-intensive, especially if preparing a homemade crust, while frittatas require less cooking time, making them a quicker and easier choice for breakfast or brunch.
More Flavor Variations for Crustless Quiche
This crustless quiche is incredibly versatile and can easily accommodate a wide range of ingredients you might have in your fridge. It’s the perfect dish to help you use up what’s on hand. Spinach: Boost the health factor and flavor by adding spinach and sprinkling some feta on top for a Mediterranean twist. Be sure to sauté spinach (or any other high-water content veggies) well to remove excess moisture. If not, your quiche might end up too watery.

Storage Recommendations:
Refrigeration: Store quiche in an airtight container in the fridge for up to 3 days. Reheating: Reheat leftovers in a pie dish at 350°F in the oven, or heat gently in the microwave .
Freezing: Crustless quiche can be frozen. Wrap it securely in plastic wrap and place it in an airtight, freezer-safe container for up to 3 months. Thaw in the refrigerator overnight before reheating.
