  • 4 Chicken Thighs – Bone-in (either skin-on or skinless, depending on preference)
  • 1 small Yellow Onion – peeled and diced
  • 1 Red Bell Pepper – diced
  • 2 tbs Cajun Spice Mix – divided 

  • 2 tbs Olive Oil – divided 
  • 1 Cup Long Grain Rice
  • 1 (15 ounce) Can Red Beans – drained and rinsed

  • 1 ½ Cup Chicken Stock (or broth)
  • 1 (15 ounce) Can Fire Roasted Diced Tomatoes with their juices
  • Optional Garnishes: Chopped Fresh Parsley

How to make chicken red beans and rice?

Heat a bit of oil in a skillet and cook the chicken until it’s golden brown and crispy on both sides. Once done, set the chicken aside on a plate.

Next, add the fresh vegetables to the same skillet, seasoning them well with salt and pepper. Cook until they’re soft and tender. Lower the heat and stir in the white rice. Pour in the stock, add more Cajun seasoning, and mix in the red beans and tomatoes. Stir everything together to combine.

Return the chicken to the skillet, nestling it into the rice. Cover the skillet with a lid and place it in an oven preheated to 350°F. While it bakes, take a break and enjoy a cocktail (or mocktail!). 

After 25 minutes, remove the lid and bake for another 10 minutes, or until most of the liquid is absorbed and the chicken reaches an internal temperature of 165°F. Once done, take the skillet out of the oven, garnish with fresh herbs and jalapeño slices, and enjoy with the biggest fork you can find!
